If these egg tarts were any lighter, they'd probably float right out of the box.
They are made with layer upon light layer of ethereally thin pastry and filled with a creamy, eggy filling that is just barely sweetened.
As you can imagine, they are heavenly on the tongue and, because they are so light, you can eat rather a lot of them.
Made by the kitchen of the Jiang-Nan Chun restaurant at the Four Seasons Hotel, these tarts are just the thing to order if you are having people over for afternoon tea, or if you just want to give your colleagues a treat.
I, of course, want an entire box to myself for a marathon session of DVD watching. Yes, these tarts and a pot of fragrant jasmine tea are good companions for a very lovely and lazy afternoon.
