AsiaOne reader Florence Voorwalt-Ho sent us this party recipe idea from Belgium, where she currently lives.
What I found so popular here are the AMUSE spoons. These are metal spoons with a rounded handle. They come in different sizes but my choice is the one-mouthful type which is almost the size of a Continental soup spoon.
The AMUSEs can be prepared way before the party - simply fill up the spoons and refrigerate.
The recipes are endless, but here are some of my favourites:
1) Place a slice of hard-boiled egg on the spoon, add Caviar and top it off with chopped onion
2) Shredded lettuce topped with smoked salmon and a twist of lemon
3) Salmon mousse with a small lemon wedge
4) Tuna flakes, topped with creme fraiche and lemon twist
5) Lightly blanched asparagus rolled in thinly sliced smoked/baked ham
6) Curry-flavoured chopped hard-boiled egg
7) Avocado mousse with lemon wedge
8) Creamed mash potatoes topped with creme fraiche and a sprig of parsley/cilantro
The list is endless!
Now, the above are the 'western' type of AMUSEs. I've added my own 'eastern' type of AMUSEs with Chinese porcelain spoons and they are a HIT!
Here again, the recipes are endless, no rocket-science here - just imagination:
1) Place Chicken rice on the porcelain spoon, top with tiny slivers of Hainanese chicken, drizzle a bit of chili sauce and garnish with cilantro when ready to serve.
This is a very popular dish worldwide so put the rice-cooker to good use - it will keep everything warm for more helpings!
2) Steamed rice with rendang gravy (your choice of meat) and topped with tiny morsels of meat. Garnish with chopped spring onion/cilantro when read to serve.
3) Steamed rice with curry gravy (your choice of meat), ditto ditto
4) Glutinous rice with topping of your choice from above (#1, 2, 3)
5) Stir-fried veggies
6) Steamed spinach/or leafy veggie of your choice - use it to wrap steamed rice and gravy of your choice
7) Steamed SOUPY-type of dumpling (yummmmmy, you get to drink every drop of the soup)
8) Mashed pumpkin or carrots topped with ginger shreds (this AMUSE has a 'Good-Luck' look to it - esp at Lunar New Year)
Again, the list is endless...And note: you can place these porcelain spoons in a pan of hot water to keep them warm until ready to serve..... Bon Appetit!
