'Conscious dining' at The Garden
Going green is in, and The Garden at the Sentosa Resort and Spa has taken environmental awareness to a whole new level with the concept of 'conscious dining'.
The Garden, which opened last month, prides itself on being 'bio-dymanic' as it sources its ingredients, wherever possible, from environmentally sustainable farms around the world.
The dining experience is likewise back-to-nature, with indoor or outdoor seating available to the sounds of peacock calls - some roam the area - and running water (it's right next to a waterfall and pool).
Indoors, the soft uplights draw attention to the centrepiece of the cleanly decorated restaurant, an elegant faux tree whose branches stretch towards the lofty ceiling.
For starters, the fresh and energetic Qi Revitalising Salad ($18) with mung beans, shiitake mushrooms, sesame seeds, snow peas and red dates was tossed at the table, and dramatically served with a spritz of lemongrass mist.
The Watermelon-Organic Daikon Roll (right, $22) with snapper sashimi, shredded cucumber and mustard cress with ponzu sauce was also refreshingly light and delicate, with the wafer-thin daikon wrap proving a hit with tasters.
There are both vegetarian and non-vegetarian main courses, although I think the meat options are too good to miss.
The vegetarian Grilled Portabello Mushrooms ($28) were served on a bed of organic wild rice, with roasted pumpkins, walnuts and golden raisins. While the rice was surprisingly full of flavour, the mushrooms was a tad overdone.
This was certainly not the case with the 'Sous Vide' Scottish Salmon (right, $46), served with organic quinoa 'risotto', roast chicken jus and watercress emulsion.
The salmon fillet was placed in an air-tight plastic bag and slow-cooked at exactly 58 deg C to maintain the flavour and texture of the meat.
The result was a succulent, well-balanced dish with the saltiness of the quinoa (a cereal grain) perfectly complementing the lightly flavoured salmon.
While the desserts were nothing extraordinary, the scoop of Tahitian vanilla and basil sorbet in the Minestrone of Fruit with Forest Berries ($15) was remarkable for its smooth texture and unique blend of flavours.
