Top pick is the Hokkaido King Crab

TUCKED away in a corner at the Marina Square mall, you'll find a piece of Japan.

"This one is specially flown in from Hokkaido," executive chef Thomas, formerly from Kaisan at the Raffles Hotel, tells me. Leaning forward, he spills: "You can't find it anywhere else."

He's talking about the grilled mackerel, we've been devouring.

"It's very delicious," I tell him.

"Did you marinate it?"

Looking a tad offended (in jest), he assures me it's all in the freshness of the fish flown in directly from a Hokkaido market.

Twice weekly, this cosy Japanese diner gets shipments from Hokkaido.

My top pick here is the Hokkaido King Crab in paper hot pot - the broth gets only sweeter as you sip along.

That's because the paper bowl sits atop a mild charcoal flame, allowing the broth to simmer and unleash the sweetness of the crab.

Verdict: This place takes freshness very seriously. Even its wasabi is made from scratch.
